Burgeon combines locally-sourced food with innovative craft beer at The Arbor in Little Italy

Burgeon at the Arbor is a taproom and scratch kitchen offering a unique tasting experience to San Diego’s historic Little Italy district in Spring 2021. The Arbor serves as a reminder to the San Diego community about what dining out should be, pairing the innovative craft beer from Carlsbad-based brewery Burgeon Beer Company with an approachable, sustainably-focused fusion of flavors by Chef Chuy of The Good Seed Food Company.

Our Commitment to San Diego-sourcing and Environmental Sustainability

We are committed to building our scratch kitchen in concert with our mission to grow and flourish sustainably. The Arbor’s seasonal menu rotates with locally and ethically sourced produce, seafood and meats to deliver a dining experience based on the delicious tastes and aromas San Diego's farmers have to offer.

The scratch kitchen model allows Chef Chuy to repurpose many ingredients throughout our menu, enabling new creations and ideas to thrive while reducing waste. Every dish on the menu is crafted to accentuate the beer drinking experience and there will be an abundance of organic, dairy-free, gluten-free, vegetarian, and vegan options offered.

About the Chef

Jesus de la Torre (Chef Chuy) is the executive chef of The Good Seed Food Company and leads the kitchen at The Arbor. Born in Mexico and raised in California’s San Fernando Valley, he worked his way up the ranks in both the front of the house and back before becoming a chef 20 years ago.

The Good Seed Food Company began in 2017 with Chef and his wife Kadi, and is known for its creative pairing events with local breweries, cideries, meaderies, coffee roasters, and wineries.

Chef Chuy does nothing traditionally; he pushes flavor boundaries, thinks outside of the box, and is excited to pair his unique menu with the innovative beers at The Arbor.

Sourcing Fresh Produce

At Burgeon, we encourage guests to drink our beer fresh to maximize flavors and aromas, and Chef Chuy embraces a similar approach by utilizing the freshest produce and ingredients possible in his inspired dishes. De la Torre has built lasting relationships with many farmers, markets, other chefs, and fisheries over the years and delivers his farm-to-table practices to patrons at The Arbor.

Farm-to-Arbor

Chuy works with numerous local farmers including a mother-and-son duo in Ramona Connelly Farms, Rancho J'Balie run by Steve Bailey in Valley Center, Specialty Produce, and more to source fresh avocados, citrus, and other produce. Chef Chuy also plans to work with a variety of San Diego's fish vendors like Tuna Harbor Dockside Market to get his hands on locally-caught seafood which will translate to delicious specials including ceviche, fried fish tacos, and more.
